These cookies are so nostalgic for me! My grandmother always used to give me these, together with a cup of earl gray with way too much sugar, haha! They are very delicious and very easy to make. You probably have all the ingredients already at home! So here is the recipe for cat’s tongues cookies:
Ingredients (50 cookies)
- 100 gr. confectioner sugar
- 100 gr. butter (room temperature)
- 100 gr. flour
- 1 package of vanilla sugar
- 2 egg whites
- pinch of salt
Preheat the oven at 180 degrees Celsius.
Mash the butter with a fork until soft, and start mixing it with a hand-mixer until it is creamy. Then add the confectioners’ sugar, vanilla sugar, egg whites, salt and the sifted flour, and mix everything together with the mixer until it’s well combined.
Put the batter in a piping bag with an opening of about half a centimeter. Put a piece of parchment paper on the baking tray and create straight stripes. The cookies will start to melt quite a bit, so make sure they have enough room to expand.
Place the baking tray in the middle of the oven and bake the cookies until you see that the edges start to brown (about 5 minutes). Take the tray out of the oven and let the cookies cool for a minute before transferring them onto a plate (they will still be a bit soft).
When they are completely cooled down, you can start to decorate them if you want. Use chocolate to decorate, or sandwich two cookies together with buttercream in the middle!
